Om kaffen

Denne kaffe er en nicaraguansk natural med masser af naturlig sødme og en blød, rund mundfølelse. Kaffen kommer fra Sajonia Estate Coffee, S.A. og er lavet på Catuai Rojo, dyrket i 1200–1340 meters højde, hvor bønnerne modner langsomt og udvikler mere dybde og kompleksitet.

Som Natural / Sun Dried tørres kaffebærrene med frugtkødet på. Det giver typisk en mere frugtig og “saftig” kop med tydelig sødme og en længere eftersmag. I koppen kan du forvente noter af tørrede frugter og moden frugt, afrundet af kakao/chokolade og en behagelig, balanceret afslutning.

Ristningen er udviklet til brygmetoder, hvor du får det bedste frem i aroma og klarhed – samtidig med at kroppen stadig føles fyldig og komfortabel. En rigtig god kaffe, når du vil have noget, der både er let at brygge og spændende i smagen.

About the cultivation and processing - Processing the coffee

The coffee is harvested manually when the berries are at a high level of ripeness, between 19 and 23 Brix. The coffee is transported from the field to the wet processing plant in small plastic boxes to avoid crushing the coffee berries. The macerated berries are then transferred to the dry processing plant at Sajonia Estate Coffee in plastic boxes. In the dry processing plant, the coffee is spread out on African beds directly under the sun for 8 hours to reduce the moisture level. The berries are then slowly dried for 28-30 days on African beds under shade in saran tunnels with 80% shade.

About the producer, Oscar Nazareth Alonso Rivera, Linda Vista

Oscar Nazareth Alonso Rivera runs the coffee production at the Linda Vista farm in Nicaragua. Located in the El Salto community and surrounded by family farms, the farm has a history of 52 years in family ownership. With an annual production of 1414 quintals and a wide range of coffee varieties, including Caturra Estrella and Catuaí Rojo, they produce quality coffee through the use of different processing methods such as natural drying. The farm has 10 permanent employees and employs up to 60 additional during the harvest. Despite challenges such as rising prices for agricultural inputs, they focus on sustainability and tailor-made solutions to ensure the quality of the coffee and the future of the farm.
