Imagine a cup that smells light and elegant, almost like a breeze through a cherry tree in full bloom. Sakura, with its 100% Arabica beans from Honduras, is not your typical coffee. The light roast highlights the delicate nuances of the beans, and the experimental process with yeast from Champagne adds a unique and sophisticated twist.

The body of the coffee is light and floral. You can expect a clean and light drink with a pleasant acidity reminiscent of bright fruits such as green apples or white grapes. With notes of apple, lime and grape, a fresh and sparkling dimension is added to the flavor profile. There may also be subtle floral notes, reminiscent of the name "Sakura" (cherry blossom in Japanese). The champagne yeast can contribute a light, sparkling sensation on the tongue and perhaps even a touch of sweetness that balances the acidity in an elegant way.

The aftertaste can be clean and persistent with a subtle fruity or floral touch.

About the cultivation and processing - About the process

La Cumparsita is a family project, strengthened by a couple of engineers. They carefully treat each plant with natural products to get the best out of the mountains. They guide coffee harvesters in selecting the ripe berries from the trees. Floating and hand sorting methods are used to separate the good and bad berries. The good berries are then loaded into bioreactors where pressure, temperature, water quality, pH and the concentration of microorganisms are regulated. The berries are then inoculated with natural yeast strains normally used to brew beer, as well as herbs, where due to the fermentation they are dehydrated and the resulting compounds are naturally transferred to the coffee beans. The fermentation process lasts 40 hours (1.6 days). Once fermentation is complete, the berries are dehulled and sun-dried until they reach the appropriate humidity level.

About the green beans - La Cumparsita, the Velázquez Lopez family

Near Chinchina, Caldas, Colombia, you'll find a farm called La Cumparsita Coffee Farm, owned by producer Sebastián Velázquez Lopez and his father Carlos Velázquez Henao. This family project began in 2021 when they planted and cultivated coffee on 5.5 hectares of land. By 2023, they were able to sell their first production of specialty coffee to the world and La Cumparita was on the map.

At first they only had two coffee varieties, Caturra and Colombia, and by the end of 2023 they started growing Pink Bourbon and Yellow Geisha as well. La Cumparsita was the brainchild of Sebastián, who believes that part of transforming coffee is giving the plants a better life and creating a better way of working for his employees, including his family, who are the main force behind the daily work.

Sebastián is passionate about coffee and works tirelessly with his wife Eliana Gomez Correa; together they manage to take the entire coffee project forward. Currently, La Cumparsita Coffee Farm has 10 planted varieties, 4 of which are in harvest and the rest are under cultivation. The company's goal is to grow every day, produce and create better coffee for their customers and in the future show many people in the world that they can have high quality in a natural way.
